
Pastured chicken - Whole bird (~3kg)
There’s not much to beat a proper whole chicken. Roast it well and you get crisp skin, rich, deeply flavoured meat, and the makings of several meals besides.
Our chickens are raised on pasture, following behind the sheep and cattle as part of a living system rather than a stand-alone enterprise. As they range, they scratch through the grass, pick through bugs and larvae, and help return fertility to the soil. In doing so, they help nourish the pasture, support healthy regrowth, and play their part in cycling nutrients, building soil and sequestering carbon.
They are raised here on farm from day old chicks, grown out to maturity on grass, then when the time comes they are processed and butchered on farm. No trucks, no long motorway journeys, or tortuous hours inside a lairage and abattoir.
That way of raising birds matters ethically, environmentally, and nutritionally. Birds grown on pasture, with fresh air, movement, and a natural diet, produce meat with a better omega-3 to omega-6 balance, less saturated fat, and a deeper, more savoury flavour than the standard watery supermarket chicken. Not mention the impending threat of chlorinated chicken on the horizon.
Roast it simply with salt, fat and herbs, or go further with lemon, garlic and rosemary. Either way, this is a bird worth cooking whole and making the most of, from the first roast to the last pot of stock.
